Chef Tim Bryan is spearheading the kitchen team at Redfern’s hottest new café, Three Williams. Tim brings his technical experience to humble café food after more than a decade working in top kitchens around the world.
Tim completed his apprenticeship at one of Australia’s most highly acclaimed restaurants, Matt Moran’s Aria. This intermediate role quickly evolved into a sought-after position as Aria’s chef de partie, reflecting his level of culinary skill.
A few years on, Tim ventured overseas to further his experience. In London he worked as chef de partie at internationally esteemed Two-Michelin starred restaurant, The Square, under the direction of celebrated chef Philip Howard. After excelling in this role, Tim moved into a sous chef position at The Cuckoo Club, a trendy London restaurant and bar specialising in contemporary European cuisine.
Following his two-year stint in London, Tim returned home to his roots at Aria, this time as sous chef. Here he gained valuable experience managing the kitchen, leading a team of 20, and overseeing all facets of food preparation and service, as well as assisting the chef de cuisine.
In early 2012 Tim was recognised for his burgeoning talent and leadership skills, and offered the role of head chef to open Matt Moran’s new restaurant, Chiswick. This role further enhanced Tim’s capability at leading a kitchen team and allowed him greater creative direction.
Now at Three Williams Café, Tim is focused on showcasing his creative palate through café fare. Along with his finely tuned technique from many years at high-end restaurants, and a vision for simple, rustic dishes, Tim’s menu at Three Williams is set to raise the bar for café dining experiences within Australia.
Established for the urban dweller, the café hopper, the busy parent, and every which-man or woman in between, Three Williams is Redfern’s café for the people.
Located in the heart of Redfern, new café Three Williams opens its doors to offer a spacious and convivial setting for meeting, eating and lingering over a cup of Single Origin coffee. The spacious venue embraces a warm, minimalist aesthetic, with enough room to accommodate groups of all sizes, including couples, colleagues, and families.
The wholesome, honest menu reflects the talent of ex-ARIA chef Tim Bryan. Guests can expect vibrant, generously portioned fare, including lush produce-driven salads, house made mueslis and signature ‘narnie’ sandwiches. Tim’s rustic cafe menu sits alongside an enticing array of sweet treats created by pastry chef, Noreen Bryan. Stemming from top-notch experience, including a stint at Marcus Wareing’s The Berkeley, Noreen’s confection collection is sure to leave saccharine hunters weak at the knees.
The Three Williams team are also passionate about the art of coffee, with a troop of well-trained baristas behind the grind.
Glen Bowditch leads the team on the floor at Three Williams. His impressive hospitality history includes managing The Grounds of Alexandria, and overseeing the rapid expansion of various Sonoma cafes around Sydney.
The café itself spans a generous 280 square metres, and features a dedicated kids corner complete with oversized chalkboard, various games and toys for the tiny tots. Three Williams is also flexible enough to accommodate everything from mothers’ groups and meetings with colleagues, to catch-ups with mates and intimate brunches for two.
