Started apprenticeship in Brisbane working for Carlyles Restaurant, suburban fine dining, then moved to Novotel Brisbane to finish his apprenticeship. Once he completed his apprenticeship, Peter travelled to Canada in 1999 where he spent 12 months working for a boutique catering company in Victoria, Canada called Feys & Hobbs. There he assisted in building the business from a small shop front into a commercial kitchen. They specialised in local produce, preserves, corporate and private catering, weddings and event management for high profile clients.
In 2000, Peter moved to England and spent 6 months in Brighton, 18 months in Oxford at ‘La Gousse D’Ail’ as Sous Chef working for Jonathan Wright who was the former Chef de Cuisine at 2 Michelin Star Le Manoir aux Quat’ Saisons. Peter then moved to London working at John Burton Race (2 Michelin Star) and also in corporate catering for Citibank. In 2005, Peter returned home to Brisbane and worked at Lat 27 (now Alchemy Restaurant) and Liquorish as Head Chef. In October 2011, Peter and his wife Michelle purchased Clareville Kiosk in the Northern Beaches of Sydney.
