Muscovado

A.K.A Barbados sugar, Moist sugar, Poor Man’s sugar

Muscovado sugar is minimally refined cane sugar often used in baked goods and pastries as well as sweetener in coffee and tea. Muscovado sugar is fairly coarse with large crystals, moist and sticky in its appearance and has a high molasses content which makes it darker and uniquely strong flavored.

Unlike other brown sugars, Muscovado is made out of sugar cane juice which is cooked before being allowed to dry. During this cooking process coconut milk and lime juice is added to help purify the cane juice. Once dry, the sugar is broken into the soft, large crystals typically associated with Muscovado sugar.

As Muscovado is not at all or only minimal refined it does contain many of the naturally occurring minerals and nutrients of sugar cane. Compared with white sugar which has virtually no nutrients due to the refinement process, Muscovado can be considered the “healthier” alternative as it does contain high levels of potassium, calcium and iron among other nutrients.

Moscovado offers a reasonable good resistance to high temperature and can be used for caramelizing in dishes such as crème brulee. Working with Muscovado needs to be looked at, as the moisture within the product may alter the baking results.
